Alongside my “no sugar”eating plan my daughter is lactose intolerant and my friends, Bernie and Linden, don’t do gluten. Often we will gather together for meals and with three teenage boys I am always challenged to come up with something nice for pudding and recently found three big hits thanks to Pintrest. I’ve adapted them slightly to further reduce the fructose as that is the sugar I am minimising my intake of.

The first one is a healthy snickers pie which we had yesterday and it was amazing. I made two changes, firstly I replaced the maple syrup with Biona’s rice syrup and then the other was to replace the cans of coconut cream with the new product from M & S’s “made with no dairy” range  which is the most sublime coconut cream, I used a 250g tub. I decided to drizzle it in chocolate and used quarter of a bar of Lindt’s 85% cocoa which I melted in the microwave.

The next one was from a site called “Oh she Glows” and it was a version of Banoffee Pie.  Again I replaced the maple syrup with Biona’s Rice Syrup (available from Ocado) and with the same coconut cream from Marks and Spencer. This was better than any banoffee pie I had ever tasted and I served it to my friends at my spring soirée. Two of whom managed rather large pieces. I found it very rich, but lovely.

Finally, and the one that seems to have had an absolutely unanimous thumbs up was from a site called “Quite Good Food“. This was wonderfully light and refreshing. I have to admit I added lime zest to the mixture and fast tracked soaking the cashews by doing so for an hour in boiling water.  The silken tofu I used also came in 300g tubs so the firsts time I simply used 600g and it worked just as well and then I wanted to make a smaller one and only used 300g the next time, same quantities of everything else. Although, as before, I replaced the maple syrup with rice syrup.
