Mug Cakes

More and more I find that mixing up a mug cake which is full of protein is a good way to start my day, especially if it is one where exercise is forming a large part of it.  Whilst Pintrest is a great source of recipes more often I find myself adapting those of two people.  My quitting sugar hero Sarah Wilson who has 4 that I play around with from her latest book, Simplicious.  The other is from a blog called  ‘The Big Man’s World‘.

Here are two adaptations:

Chocolate raspberry

Mix the following ingredients in a bowl, transfer to a mug and zap in the microwave for 3 minutes.

4 tablespoons ground almonds
3 tablespoons unsweetened desiccated coconut
0.25 teaspoon baking powder
1 teaspoon raw cacao powder
3 tablespoons milk, I use coconut milk
half a beaten egg (I put the other half in the fridge and use in the next one I make!)
About 5-10 raspberries

Once done I turn mine out onto a place, dollop a spoonful of coyo plain coconut yoghurt and enjoy

I’ve adapted the Big Man’s Brownie and halved the ingredients so here is what I do:

The Small Ladies Brownie

Mash 1 small banana or half a large on in a bowl
Add 1 tablespoon of your favourite nut butter, I use almond
Add 2 tablespoons of raw cacao powder
0.25 teaspoon of baking powder or half a beaten egg

Mix all together, transfer to a mug and zap in the microwave for 3 minutes. You should start to see it rise, don’t open before it does.

Again I decant into a bowl and top with Coyo and a couple of slices of banana.

Both of the original recipes don’t use egg so if you are vegan just omit it.

For a low calorie, high flavour dinner try combining all those lovely veggies like courgette, aubergine, spinach, cauliflower and peppers with some lightly fried onions, a tin of tomatoes and curry powder. YUM!
